They don't turn to mush.
Super good bean and holds its shape and flavor. I have used in ham soup, bean salad, cassoulet. I am definitely going to keep using ithem.

Value for the money
Superb taste. Excellent value for the money- about half the cost of authentic Tarbais beans. I made a killer cassoulet with these this weekend.Pro Tips:1) soak for 24 hours2) for first simmer of one hour start them in cold water- otherwise the shock of throwing them into boiling water will result in peeling off of the skins3) When you’ve assembled the cassoulet put the whole dish in a cold oven and let the cooking vessel come up to temperature along with your oven.

Really flavorful beans for a cassoulet...

Be patient, they'll soften!
I soaked them for ~24 hours, cooked them by themselves for a while (an hour?), then cooked them in cassoulet for about 4 hours. That's a lot of cooking, but the result was wonderful! These beans stand up to "low and slow" cooking without getting mushy. The one negative is the cost, as far as I'm concerned.

Stale Beans
Like some other folks are saying the beans j received were hella stale. Scientific expression. Did not soften after overnight soak and 4 hour cook time.
