This olive oil is bitter, as a fair warning to those who may be unaccustomed to early harvest EVOO. I can't say this is the best tasting olive oil I have tried, but it definitely tastes healthy and fresh, very potent. It has a nice lingering peppery bite that comes through after the bitterness subsides. This is truly an early harvest, and tastes strongly of unripe green olives. I personally don't find it suitable for most food accompaniments, save for perhaps fresh raw vegetables, but the polyphenol content is supposedly over 1000 mg/kg, so at the very least it is a very healthy olive oil, and one that I would consider medicinal. In fact, I do not cook with this, but just drink 1-2 tbsp per day. I would recommend this if you want a very fresh, reasonably priced, and very high polyphenol olive oil, but not one with an elegant or fruity taste. This is a potent oil, and tastes almost like a 4:1 concentrate of a typical extra virgin olive oil, so it really is a nice value for a 2017/2018 harvest.

One of the better olive oils I have tried. I drink one tablespoon a night with a lemon. It has a good peppery taste and a nice green color.

I was hoping for something more green-olive tasting. This does taste like green olives alright, but it is also quite bitter. I love green, unfiltered, single-source olive-oil. This for 80% of people is going to be too bitter. For the 20% that are OK with the bitter, enjoy!

After reading the review from Amazon, I bought it to try out. I received the oil yesterday n tried out this a.m. Wow....never in my whole life tasted such a wonderful oil before. It has a mild greenery taste. A little bitter like drinking Chinese medicine. When swallowed it, a mild peppery hot. The colour of the oil is olive colour. The oil is not sticky. Very good oil. Will purchase this oil again. I would like to thank the company for their effort to produce such a pure healthy oil. To manufacture such a Real oil is not an easy task. Thank you.

This is something quite different from anything you will get in a grocery store. The bottle is clearly marked with a pick and bottling date. The oil is a warm green color, and the oil itself tastes green! It actually taste of olives, of green growing plants. If green had a taste it would be this. It leaves a slight tingle at the back of your throat when swallowed.

Gourmet, complexity of nuanced flavors; bright, fresh top notes with smooth subtle "peppery" tones underneath. Taste appropriate to use on bread (instead of or with butter) and to drizzle over pasta or salads. Love that this is an American product, although I understand the olive trees originally came from Italy! Well-priced.

Very bitter

It's been a long time since I enjoyed French or sourdough bread sinply dipped in olive oil. Today was a delicious experience.I look forward to enjoying it on salads and in cooking. Bonus: The box it comes in is a real keeper.
