Nothing special
These have to be cooked to to the point that the pasta is somewhat mushy if you expect the cheese to be softened. The pasta stands up this rather well, however. I add a small carton of Pacific Foods Cream of Chicken Condensed soup when Icook these. It comes out like an alfredo sauce minus the garlic. I'll order them again, but they are nothing to get excited about. Would be good in soup.

Full Boil Required
Great taste and they do not need heavy saucing. Nice cheese combination. One thing I've noticed when following their instructions is the cheese filling is still hard after the stating cooking time. Not sure why since the actual pasta is cooked. This may be because of my altitude...things take a higher temperature and longer to cook here (even to make water boil). I now boil these 5" longer than stated and still usually up putting them in the microwave to soften since I've already sauced them.Good in cold salads. Plus, the cheese will hydrate more while it's chilling.

Authentic Imported Italian
I was a but concerned, reading some of the not so complimentary reviews. So, several days ago I mustered the nerve to try them. First off, I just didn't think one package, as small as they are - would be enough for two people, so I cooked two packages. While they were cooking, I made a simple sauce with ground garlic (don't use powdered), salt, some butter, some olive oil, and thickened it with a corn starch mix with water. I boiled the ravioli for about thirty minutes, and had started tasting at about twenty five minutes. Not too long after thirty minutes they were cooked and cheese inside soft. Let them sit for a bit in the water. Used a long handle strainer thing to get enough out for two servings, and dumped the rest out into a strainer in the sink, and left them till dinner was finished. They were outstanding - not mushy, not hard, cheeses in center fully cooked and soft. Chucked what was left into a plastic bag and put in fridge. Tonight, put enough of the leftover on two plates, added a couple of things to the leftover garlic sauce to stretch it, in microwaved it with sauce at about three quarters heat, for two and half minutes. Again, not mushy, did not stick together - and tasted great. The surprise was there is still enough over for a couple more normal servings! So, I'd have to give them a high rating. Will try to update what things are like after being frozen.

Don't see myself buying these again.
I'm kind of surprised there aren't more negative reviews for these. I'm no stranger to the dried stuffed-pastas. In college I practically lived on the tortellini variety, and had good experiences with those, but they weren't available at the store on the day I chose these - not sure if they stock them anymore or what. So anyway, when I got this product I felt fairly confident that I would be pleased with it. However, upon preparing it I realized otherwise. I'd say maybe I got a dud package but after the first I opened my second one and cooked it as well just to be sure. I cooked these pastas 5-10 minutes longer than the directions called for (and I live at a regular altitude) but could not get these to cook properly. The shells were just about mush and the inside "cheese" wouldn't not soften. When I tried to plate the raviolis they were so weak from cooking they just tore apart and the little hard-ish chewy brown-colored cheese nuggets(?) fell out of most of them. The ones that remained in-shell were not very good. If the texture wasn't bad enough the taste wasn't very pleasing either. My fiance and I were both very disappointed. The boy stomached them, but I literally gave mine to the dog. I never do that. I'm not a picky eater at all, but I just couldn't do these. As cheap as I am, I'll still probably just pay a little more and stick to the frozen or refrigerated filled pastas from now on.

Mezzaluna Ravioli
I am very pleased with the quality of these ravioli--I didn't expect that they would be especially good since they are dry prior to preparation. I topped them with a classic white sauce and everyone enjoyed the dish.

Love this product! So tasty. Speedy delivery too. Great to add to a soup like pasta é figiole or sauteed with butter & garlic.

Pressure cooking works best for these (IMHO)
Pressure cook these in a bit of water or broth for 3 minutes and then use 'quick release' and they come out perfect and you can add them to whatever pasta dish you want to add them in.
