Small Hand Foods Gum Syrup - 8.5 oz

Old cocktail recipes often call for gum syrup, so I was curious if I was missing anything. Turns out, I wasn't. Gum arabic is a great emulsifier. It keeps mixtures from separating into their various components. It's used a lot in processed foods like soft drinks, since they keep the sugar and other ingredients from separating and crystallizing over time.Unless you're making mixtures that are being stored a long time, you may not have a real need for this. It is fine for what it is -- 2:1 simple syrup (two parts sugar, one part water) with some added gum arabic.In the 19th century, gum arabic was added to 2:1 simple syrup to prevent the sugar from crystallizing. I assume that people were making huge quantities of the stuff and having them sit on the self for weeks. According to cocktail books, gum syrup has the additional benefit of giving cocktails a "silkier mouth feel." Not really sure what that means. A slightly more viscous texture, like what you get from adding egg white? Maybe.In any case, the texture effect is subtle. You have to add a lot of gum syrup before it becomes very noticeable (on the order of one to two fluid ounces). And because this is 2:1 simple syrup, doing this will make your cocktail very, very sweet, especially if you have other syrups in your cocktail (e.g., curacao or maraschino liqueur). Egg white, by contrast, changes the taste much less.So if you need 2:1 simply syrup, this will be fine. Don't expect too much from it as a thickening agent.

This was my second time buying this product; unfortunately it arrived broken and the syrup was all over the packaging.Nothing was salvageable.

Great product! Adds a certain "something" to the texture and all around mouthfeel of your drinks. Substitute this for simple syrup 1:1 to give drinks a whole new facet! 4 stars because this stuff is pricey; otherwise, it's a great product!

Good for mixed drinks and provides the right amount of sweetness. It is made with organic ingredients and a little goes a long way. I would buy this again in the future.

Makes the best old fashioned and really any cocktail that calls for simple syrup. It’s the perfect sweetness and has this amazing texture! The orgeat is amazing too!!!
