Q: I'd love to use this for my kid's football/baseball games but am worried about it being obnoxious&taking up too much room.Anyone use this for games?

I use it for soccer games for the team as well as baseball games to Block sun for team. I’ve used for myself too. I don’t think too big. Can fit like 3 chairs under.

Q: Is it simple for a 55 year old woman to set up and take down by herself?

Yes, My 82 year old father in law sets it up and takes it down hmself. He loves it.

Q: Does this umbrella fit in a screw in the ground holder? Can it be set up like a normal umbrella?

It does not screw into a holder. There are stakes provided that you can stake down the umbrella. It does not sit up like a normal umbrella, it does tilt off to the side as shown in the picture. What I liked about it I can sit in a chair and still have cover over me.

Q: In order for this to work properly, do you have to stake it down in a soft surface like grass or sand? Or, can you use weights to hold it down?

It is very stable when staked-down in sand at the beach. There are small grommets around the perimeter that take stakes (that are provided) . I would be unsure if "weights" could be secured to these small grommets to stabilize it and hold it down.
