adequate substitute for fresh natto
I really like natto and have eaten it most of my life. This powder is an OK replacement for when it is challenging to get fresh natto. It seems to have most of the nutritional benefits, and I like the taste. I've been eating it on rice with seaweed and eggs.

Let me warn you: These beans are hard as rocks! Fortunately, if you rehydrate them, they will soften. To rehydrate, just put a small portion of the dried beans into a little jar (for example, an empty spice jar), add water to cover by an inch or two, refrigerate the jar and by the next day the beans will be soft. Note: When you rehydrate the beans, the water that’s not absorbed will become cloudy. Healthy, Neutral Tasting Natto
Natto is healthy and the fresh beans don't taste very good to me. This is a perfect alternative and blends easily into soups, smoothies, and yogurt. I will be reordering soon.
