Great low carb, but not keto, substitute for pasta
Note these are low carb, but do have ingredients that are not keto (e.g., oat and wheat fiber). I followed a strict keto diet to lose weight and having reached my goal, am now loosening restrictions while remaining low carb. I love Mac ‘n cheese and tuna noodle casserole, and you just can’t achieve a satisfactory dish like that with zucchini noodles, spaghetti squash, shiritaki noodles etc. So, I was super excited to find this high fiber, low net carb Elbow macaroni substitute. It feels and tastes like the real deal! I used half a bag to make a large pan (9x13) of old school tuna noodle casserole, using blanched broccoli florets in addition to the elbows, and putting my own spin in to keep it low carb yet delicious. It was extremely satisfying, especially after going more than a year without anything like it. The bag says it is 4 servings, so I technically used 2 servings, but I will get 6 decent sized portions out of my casserole. A little goes a long way. I can’t imagine eating 1/4 of the bag as one portion. So bottom line, a great low carb elbow macaroni! But for those wanting to stick to a strict keto diet, stay with zoodles and the like.

So good!!!!!
So good I was only able to get half a pot picture lol. My kids even love it. We keep them low carb as well. These are a staple in our house and we buy 4 bags a month!!!! I hope they never go anywhere, the only Pasta that's true low carb AND taste just like regular pasta. I wish they didn't use wheat and were gluten free but I'll take it!!!

It's good!
I follow a low carb diet and do most cooking in my Instant Pot, which is where I cooked this pasta (two minutes on high pressure followed by five minutes of natural release and then a quick release). I cooked one pack with enough water to cover the pasta, a tablespoon of butter, pepper and kosher salt. It came out perfectly done and the taste was good.The obvious drawback is that this product is expensive. But for quality, texture and taste, I give it a thumbs up.

Not a fan, but good in a pinch
Bought these because I am following the keto diet and was tired of the other “soy” type noodles. No matter how long you boil, they still have an odd texture; like undercooked pasta. Flavor was ok, but texture was an issue. Almost grainy too. It’s ok in a pinch, but I don’t think I’ll buy again.

Don’t buy unless you like very chewy pasta
I bought this to make keto mac and cheese. The cooking instructions say boil 8-10 min for al dente, longer for softer pasta. At 11 minutes, it hadn’t even reached al dente. 25 minutes later, I gave up and added part of it to the cheese sauce. I left the rest sitting in the hot water (turned off the heat but left the lid on). I ate SOME of the mac and cheese. The flavor was ok, but mac and cheese should never be chewy. I checked the pasta that was still in the hot water and it hadn’t changed at all after another 30 minutes. Will never use this again. And the saddest thing was that the cheese sauce was excellent, but it all went down the garbage disposal.

No Blood Sugar Spike After Eating
The best thing about these noodles is that after eating them, my blood sugar is nice and even; no spike! This, of course, is great news for somebody who is insulin resistant. The other great news is that they actually taste GOOD! I've tried several other types of low-carb noodles, but none of them taste as much like a normal noodle as these do. My first experience was having these noodles in a chicken/mac-n-cheese casserole. I was so happy to be able to eat noodles again without a strange mouth-feel, or odd after taste. I've also had these with a meat-based spaghetti sauce, and again, they were fantastic. My best experience with them, though, was in the mac-n-cheese.

Close to regular macaroni
Just got this product this morning and had the urge to immediately try it. The recipe of choice was Mac and cheese. The product had good taste and texture, but wasn't exactly that of regular macaroni. All and all it is ok.The 3 star rating is for the most part due to the high cost. $14.00 for a small 8 oz bag. The cost will prevent me from purchasing it in the future. Some of the best steaks at my local market are far less per lb and are also low carb.

Good macaroni texture!
Very pricy, but if you're carb averse, then try this! The main ingredient is pea protein isolate, now featured in many low carb, plant-based foods. The texture is very good, and my Mac and cheese turned out great using the same method I use with macaroni made with semolina as the main ingredient.I had all but eliminated "regular" pasta from my diet since its carb and calorie content was way too high to include in my pasta-based meals. With this product, I'm happy to put pasta back on the menu!! Big YAY, and big THANKS to the Great Low Carb Bread Co. for this product.
