Natural enzymes from Aspergillus niger, Bacillus subtlis and Trichoderma longibrachiatuym convert plant fiber starches into simple sugars, which in turn provides substrate for lactic acid bacteria (LAB) to utilize as energy. The Pediococcus LAB initiates fermentation and works at high pH range. The Enterococcus LAB reduces pH within the first 8 hours. This paves the way for Lactobacillus LAB's to compete fermentation by producing large amounts of lactic acid under low pH conditions.
