Tony Chachere's Creole Instant Roux Mix and Zatarains Pure Ground Gumbo File Bundle- 2 Items

I've used this twice now. The first time, I tried to follow instructions and found the result to be "thin" tasting. Second time, I resorted to the tried and true method of adding and tasting. Voila! It was great. Both uses were for Shrimp Etoufee. For a darker roux for use in Gumbo, I think I'll stick with the classic prep method. In truth, the filet was a throw-in and hasn't been used yet. I'm sure it's fine.I learned of this roux mix while visiting an old buddy in Lafayette, Louisiana. HIs recipe for etoufee calls for the Trinity plus garlic to be sautéed in butter. Then add a cup or so of a bodied white wine (eg Chardonnay) some tomato, and the mix. After the veggies are softened, add the shrimp and cook for 4-5 minutes. Total time including sous chef duty is about 45 minutes.It's outstanding if you hit the sweet spot
