Q: What holds the water bottle in the pouch? Can it be placed on the back hip without the chance of the bottle falling out?

The size of the pouch is very accurate and the bottle fits very tight but still easy to pull out. The magnets hold the pouch very close to your body. The bottle is curved to fit your hip or wherever. Wearing it on the back hip should not be a problem. I wear mine in the front and have not had a problem. Hope this helps

You won’t have a problem with the liquid freezing for runs up to an hour down to 25 degrees

I'm not sure if you'r talking about stuffing sealed gel packets into the bottle or squirting the gel directly into the bottle; but either way, I don't think I would try it. In the first case, you'd never get the packets out again, and in the second case, I think most gels would be too viscous to flow smoothly through the nozzle.
