PERFECT! Even Listed As Used, Like NEW
This IP is my second one and I absolutely LOVE it! My first was the DUO and I used the heck out of that one! The first one had some condensation or leakage, where it was sitting on the counter, so I felt it had its day so it was about time to get another one. I was gonna get the same, lower-priced model but then I saw this higher model for a really great price since it was used so I took a chance and I'm SO GLAD I DID! So far, I've used it quite a bit, steaming eggs, making soups and my new favorite cooking method: SOUS VIDE! I do believe SV is the BEST way to cook a medium rare steak if you plan ahead and have time (takes about 2 hours). You do have to enter about 3 degrees higher for SV method but since I know that, it's no big deal. For example, for a 130 degree steak, you have to set the SV temp to 133. Other then that, the temp remains consistent and my steaks have been awesome, edge to edge perfection! Even a thick 3-4 inch roast!!! My salmon and ahi tuna also come out perfect! Another great feature is the inner pot. It has handles that don't get hot and keeps the pot from spinning! I love it's an 8qt, also. I went back and forth about whether I should just stick with 6qt like before, since we only have a family of 3 but I LOVE the bigger size for bigger meats, etc. The display is beautiful and the knob doesn't bother me, like others have complained about. I LOVE how it closes the vent automatically when the lid is closed and how it vents better then the older models, too. This is the best IP, in my opinion. I wish I could get the crisper lid for this model but that's not a deal breaker. Overall, the BEST thing about THIS purchase is the price for it being used. I would NOT have known it was even used if it didn't state that.

Love it wee bit more than my Duo Plus
I've gotten A LOT of use out of my Duo Plus over the last 3 years since I've owned it. Soon after was wishing for an 8 qt, but couldn't justify buying a new IP just to get 2qt more capacity. So I waited. And waited. The Ultra was tempting but a bit pricey and not enough innovation/changes to justify a buy for me. Then Duo Evo Plus came out. Wow, I liked it right away. It had enough innovations/improvements to maybe take the leap. A crazy good sale came along, but while I considered whether to go or not, next day sale was off. So I waited again. And waited and waited. FINALLY same crazy good sale came up and I nabbed it immediately. 8qt for 99$. Yeah, that was well worth it to me. And used Amazon gift cards, too. Great! Verdict? I love it even more than my 6qt Duo Plus. I like the display better. I like the way it shows where in the heat up, cook/pressure, and keep warm process it is, especially the heat up to at pressure/cooking. I like the handles on the pot. They're great! No more trying to get my fingers on rim of that hot pot to wedge it up and out. I like the way the lid and sit off at a 45 degree angle instead of straight off to 90 on the duo. More room to work with the pot with lid mounted in resting slot. I like having the souz vide option, though I've only used it once so far (successfully) with pork chops and will certainly use again here and there. I like the auto steam lock mechanism that automatically clicks the vent from venting to close when load is put on and closed. Nice little feature. I like the way the steam difuses better vs the Duo Plus spout and sputter straight up in a jet of steam. Not a big deal. A refinement really, but nicer. I like the little power cord clip on the base. And I like that it came with 2 rings, though I rarely swap them. It has everything I like about my Duo Plus (which I still use when I'm doing 2 simultaneous IP recipes) and more. I would recommend first IP being Duo Evo Plus. If I were a first time IP buyer, I'd get this one. And, for our family of 4, I would definitely get the 8qt. More capacity and more searing surface area. Oh, and I also like the flat bottom and the fact it can be put on a stove (though I haven't done that yet). Okay one last little thing. Not big deal. Again a refinement. I do like the handle the way it's curved. It's just a great little work horse. Love to just get the prep part done, close lid (auto locking vent) and walk away until it beeps done.

Why did I wait so long
Why did I wait so long to buy this pot. It's wonderful. Cooks quickly. Yes you have to wait for it to heat up and then the release but so worth it. The food tastes better because of the steaming. Very easy to use. I was scared because of all the things I read and heard about pressure cookers. When I did the "test" with water to make sure it work I realized that I could do this and that it was safe. The Duo Evo Plus is very easy to use. I follow the recipe (there are 100's if not 1000's on the internet) put in my food, close the cover, press the Pressure Cook button, then press the round knob, and then use round dial to set time to cook & High or Low temp, then press start. I'm free to do what I want until its done, no checking to see "how is it going". When the steam release valve is down I open the cover. Perfect. I've had this since beginning of November. I use it 3-4 times a week. I also spent time reading and listening to people on youtube for instructions and recipes. I did buy a cookbook but I get my recipes from the internet, they all have explicit instructions, besides recipe, how long to cook, release time. I also read the manual which is downloadable. I have the 8qt and planning to purchase 6qt sometime soon. Cooking is easier with this.

My Favorite Instant Pot to date!!!
This is my second Instant Pot and I love the new features. I particularly like the larger info screen and that it is at a slight angle making it much easier to read while standing. The Instant Pot is something every cook should have in their kitchen. Incredibly convenient to be able to set food in before going to work and to come home to a perfectly cooked meal is fantastic. The Duo Evo Plus makes it even easier to get the perfect meal quick and simple. I've been using mine for a couple of months now and haven't had any issues. Between pressure cooking meat for a stew to cooking rice. The Duo Plus has a mode and setting for a wide range of meals. The meat after pressure cooking was just sooooo Tender. The quality of the device itself is phenomenal. Being quite weighty it lends itself to being quite rugged. The knob and buttons have a satisfying click that has taken the abuse of my kitchen quite well. All in all, it is a great cooker and I would highly recommend it to anyone. I have several pressure cookers and this Instant Pot Duo Evo Plus is my favorite!
