Amazon's description should state that the footstrap is made from leather with a synthetic lining.

Q: Is it better if these fit a little tight at first? Do they stretch much as they break-in?

I believe it's better...they do stretch as you wear them. The fist 2 days the were tight but now they fit just great, very comfortable.

Q: wear 11 ee what size should I get?

They are pretty true on sizing. A size 12 should work.
