My favorite pie cookbook, always helpful!
I am not familiar with the authors' pie shop, not have I tested their pies. But in my mission to always bake kick*ss pies for every occasion, I bought their book.My pie baking has improved by leaps and bounds since I got this book. This cookbook has so many good tips. It has great explanations for each step in each recipe, and how it affects the final product.I have celiac disease, so I make my own crusts or modify recipes to be gluten free. I've made great use of this book's instructions for pie fillings, and my pie crusts are also looking and tasting better after learning some techniques from this book. Even if I can't follow the recipes exactly, I'm still learning a lot of food science and baking techniques from reading and cooking my way through it.When I need to know what to add to a particular fruit to make it stand out, I look up what the Hoosier mama version calls for - maybe a pinch of salt, a squeeze of lemon, a particular spice or a dash of almond extract - and find that it really brings out the flavor.This is one of the most useful cookbooks I own and I highly recommend it.

The Real Pie Deal
I feel like I’m a pretty good pie baker and have been doing it for years, but this book upped my game a lot with some great new recipes and techniques. Yeah this Baker is the real deal and this book my new go-to for baking pies!

Far too finicky
I was already making pies before I picked up this book, and I bought it thinking I could finesse my crust and get good ideas for fillings. It reads wonderfully. The stories about pie history, farmers markets, and the precise seasonality of fruits are highly entertaining and written by an author who obviously loves what she does. But the recipes, being designed by a perfectionist pastry chef, are far too complicated! For example, I made a buttermilk pie from her recipe, and one step instructed me to add one third of whipped egg whites, and immediately after, the remaining two thirds. No explanation why it wouldn't just all go in at once. Maybe I flubbed one of these half steps that could have put my pie over the top, but I made a similar pie (buttermilk chess pie) from an online recipe that was much better . I am also not a fan of the base recipes being scattered throughout the book. I made the Dutch Apple Pie that turned out far too watery--later figuring out that I should have used her subrecipe to cook the apples first. The book is contradictory in tone. Multiple times, Haney waxes nostalgia about how pie was the universal dessert in the repertoire of every American housewife, and she warns repeatedly that to "overwork" (overthink) a pie is to ruin it. Then she writes hypercomplex recipes, insisting on exact timing for numerous steps, and use of specialist ingredients I have not seen in other pie recipes. And that's her prerogative as a pie superstar with pastry chef experience. The book is fun to read, but for actual pie making, I'm going to take her advice about pie being a humble dish , and go back to simpler recipes from online home cooks that tend to result in better pies.

Learning all about pie!
Lessons in making pie crust from a chef who devotes her time to pie!!! I m so looking forward to trying out so many of these recipes. I am excited to find savoy pie recipes along withe the sweet & the fruit.

Thorough, good pictures, easy to read and follow
I am reviewing the Kindle version of this book. The writing style is excellent. It tells you WHY an ingredient is specified over a similar item. The tone of the narration is done in a conversational style, easy to follow - friendly, even. That's a good thing, by the way.The ingredients listed are easily available in most areas of the U.S. Nothing too exotic.Step by step recipes make for successful pies at home. That is MUCH appreciated. And best of all the results are delicious! The only thing better is to go into the store front and enjoy the pies. If you live near Chicago, that's great. If not, this book is the next best thing!The book contains lots of color photos. For maximum benefit though, I would suggest the larger (8.9") Kindle for best viewing. I was lucky, I found Hoosier Mama Book of Pie while it was briefly offered for free for the digital edition. I would gladly pay for this book if I had to though. Well worth it. Enjoy.

Different Pies
I enjoy the tips given but I found some of the recipes not to be what I would want to make. I’m not a huge pie fan, so I need the fillings to capture my attention in a good way which this book does not do.

Many recipes and beautiful illustrations
My winter project is to learn to make a good pie. As hoosier mama said, it is becoming a lost art. This book has enough recipes to keep you busy - from sweet to savory - plus great instructions with photos. It also has a special section for add-ins and ways to design the crust. I'm still reading and haven't dived into doing it yet, but I think this book will make my goal possible. Highly recommended <3

Don't Pass this Up!! Great Pie Book for All occasions!!!!
Wow! I had Googled for a pie crust recipe. I watched her Utube video and fell in love. This is THE BEST pie book! Sweet, savory, various crusts and fillings. Will certainly be a standout in my kitchen. I have probably 300 cookbooks, this will be a favorite!!!!

Great book
Purchased for my wife. She loves this book and the recipes are easily to follow though some terms are American but one can easily work this out. She also loves the title and it's now part of her collection of cookery books.

Brilliant recipes, very thorough instructions.
The recipes are amazing and with VERY detailed instructions. there are lots of tips on how to avoid all the usual problems associated with pie making (soggy bottoms and saggy tops).Some of the recipes are rather over complicated. I'm a pretty experienced baker and couldn't see the point of some of the additional stages. 4 hours to bake one pie because it was so over complicated. It did taste good, but not 4 hours good.

Lovely recipe book! Visited Hoosier Mama in Chicago on holiday and wanted to recreate some of the amazing pies.

Best pie crust ever!
I loved this book so much that I bought a second one for my mother! The pie crust recipe worked like a charm and I even used the leftover pie dough scraps from my freezer to make another scrumptious pie crust a few weeks later.This book is full of great recipes and great stories of a little pie shop. And the photos really helped me understand the recipe techniques. I hope you enjoy it as much as I do!
