But most of my eggs come from my friend's backyard hens and their eggs are not XL.

I like this egg separator. It took me awhile to select the right separator because there's so many out there made of different materials and i kept seeing mixed reviews. I didn't know a simple egg separator could be so difficult to choose lol. But, this one does the job. It separates the egg white perfectly. Nothing more to say.

High quality stainless steel so it should last for a long time. I much prefer separating egg whites this way over doing it by cracking the shell and pouring the egg yolk from one shell half to the other. I can cradle this separator over a measuring cup making it easy to measure out how much I need.

Great product use it for a recipe where I do t need the egg whites.

i can separate yolks by hand better: was hoping to use it for japanese style eggs. half the time the yolk drops in with the white and breaks.
