Q: What are the different flavors?

Mint, watermelon, lemon, orange, some other fruity flavors, berry-type flavors, a cherry maybe? They all taste pretty good, I think.

Q: Do these have the kind of goopy inside I remember from my childhood?

Cut rock candy is hard. It sounds like you may be talking about a few different kinds if it was usually at Christmas. Possibility #1 is candy straws which were a small, rectangular, hard shell with a soft inside or chocolate. Possibility #2 would be candy pillows (I can't remember if they're had a soft inside). Possibility #3 was a hard candy with a soft interior that had a wrapping similar to the fruit flavor. Strawberry-only was usually the easiest to find (finding mixed was a coup!) and we just called those strawberry hard candy. You can sometimes get the above in classic hard candy Christmas mixes (check the product photo); or, at retailers that sell old-fashioned candy (sometimes will have "country store" or "general store" in their branding). I've usually had luck with small online retailers based in Vermont or Wisconsin.
