Our olives groves are manually harvested between the months of October and November. TASTE AND AROMA Well fruited, topped by floral flavours, reminiscent of almond blossom and recently cut grass. Rich green color with delicate hints of gold, bubbling over with fresh fruit scents of apple and ripe green olives. Perfumed and fragrant, a delicate taste of tomato leaf, freshly cut grass and young almonds, a finish with a touch of bitterness, overlaid with an agreeable hint of white pepper. PRODUCT FROM PRIEGO In 1858, the Yévenes family started the olive groves farming business in the heart of the Sierra Subbetica National Park, located near the town of Priego de Córdoba, Andalusia. For centuries, the region has been known for producing exquisite olives and developing artisan skills to extract a pure liquid gold that has shaped the mediterranean cuisine in many ways. CULINARY HINTS An ideal dressing for all kinds of salads, drizzled on bread with tomato and salt for breakfast, or on cow’s or sheep’s milk cheese, accompanied by a young red wine. Its character and intense aroma bring out the taste of oily fish like salmon or tuna, as well as lighter white fish. It also goes perfectly with carpaccio of meat or fish, poached egg, pasta, or young vegetables, baked or grilled.
