Ghost chilies were once considered the hottest variety in the world, and while hotter chilies have been cultivated, they still pack a ferocious punch. Behind all that heat however, they also possess a slightly smoky, slightly sweet chile flavor. Dried chilies are extremely versatile, and keep for a very long time in pantries, ready to be chopped or rehydrated. They can also be added whole to soups, stews or sauces, then removed before serving as you would a bay leaf. Please exercise caution when cooking with ghost chilies, they are very hot. •Wear gloves while handling chilies.
