Moulard Duck Breast Prosciutto, whole 12-14 Ounce

I ordered this small duck breast prosciutto (14 ounces) because I cannot find a reasonably-priced holder clamp for a larger prosciutto. C'mon, Amazon - PLEASE start stocking a mini clamp for 5-14 pound prosciiutto pieces and boneless Serrano hams that does not cost hundreds of dollars! With the right knife (which I ordered from Amazon) this duck breast sliced beautifully and the flavor was excellent. Peppery and sweet at the same time. My Arcos 10" knife from Spain was so sharp, the very end actually cut into the tip of my plastic cutting board. Yes, the correct knife is essential : flexible, sharp and 10-12 inches allows one to cut across the grain and produce thin slices. Be sure that your meat is at room temperature. That makes all the difference in the world when it comes to slicing.

Very nice product at reasonable price (depending on seller). Have purchased it many times and will continue to do so. Duck quality is good, curing very good, perfect fat to meat ratio.12/10/12 UPDATE: Sadly for us customers, and Mondo Foods, this is no longer the same wonderful magical Prosciutto. This is not Mondo Food's fault, its the fault of the corrupt FDA who shut down small businesses without real cause. The replacement Prosciutto is very good however, better then what else is out there. Its just a little too smokey.

I received 2 duck breasts shrink-wrapped and iced. I weighed them and the combined weight was 14.35oz, but they do have the skin on. Just wanted to state that since I was under the impression that the skin would be removed. Otherwise, an excellent product!

the stated size is wrong it was only 8oz not the 12 to 14 oz stated which almost doubles the price per pound you pay for 14 oz and only get 8oz called store rep and they said it was mistake but nothing they could do lol will not order again felt like i was ripped off
