Biltong is similar to Jerky in the sense that it is a dried Meat. The comparision however stops there. Unlike Jerky, Biltong is made from larger cuts of lean beef which are cured in a mixture of vinegar and spices. After a quick cure, the meat is hung to dry for a few days to remove moisture and concentrate flavors. Way closer to a dry aged steak, Biltong, is the ultimate preserved meat snack.
