Razor sharp and very light for it's size.
I went with the 240mm with Saya. This is a wonderful knife. It feels and handles great.I have recently been upgrading my kitchen knifes, and I am very happy I chose this knife. I tested it today side by side with a 6" Nakiri by Masamoto I got a few weeks ago. I cut celery, carrots, and an onion for chicken broth. 50/50 to the knives, but man I have never had a knife cut through a thick carrot like that before... and I could actually make thin slices at the thickest end of the carrot with the Yoshihiro...And less importantly, it was very well packaged and even came with a small rust eraser and bottle of oil.

Love this knife!
Had to change my cutting style a little bit but I was able to adapt quickly. This knife is well balanced, easier to maintain than I thought and the factory edge is quite sharp. This knife really sped up my prep time and is an added joy to work with in my kitchen.

Quality with more than a reasonable price
If your thinking this is way too expensive and decide not to get it. Well your lost then. Just holding this blade, I love the feel of it. Made easy work finely dicing shallots, and coining carrots. The kiritsuke blade is the jack of all trades knife in my opinion, just because of the blade design. And though I haven't had this for a month rather a week. I can say that this blade is better than my fujin guyouto knife made by yu kurosaki. And I purchased that blade for 200 dollars more. So if your looking for a quality blade. Look no further and I promise you for those passionate cooks looking for the perfect knife, you won't be disappointed.Oh. And like the description says, this is a carbon steel knife so always have a rag on you when you use this knife.

Awesome Master Chef’s Knife
This is a 5 star product hands down. The quality of the craftsmanship is superb. The weight of the blade is perfect and it can handle a wide variety of tasks in the kitchen.I have used it for carving Tri-tip for 28 people, fine chopping large amounts of herbs & garlic, and cutting perfectly thin slices of both meats and fruits/veggies.On top of that it looks amazing and I have gotten many compliments of the knife.They even personally delivered it to my house before the estimated delivery time because of shipping delays due to Covid-19.I hope to keep this thing for decades.

Effortless Slicing
Cut my knuckle off first time I used it, didn't even notice until my yellow onion turned red. Holds a very sharp edge and very comfortable to use. 5/5 would maul myself again.
