There really was a Peter Koops, a young Dutch adventurer who left his shipping business in the Netherlands for a new life in America. he began with a hand-crank mustard mill and a horse-drawn cart, selling mustard by the ladle to loyal customers. The packaging and delivery systems have changed since then, but the carefully made stone-ground recipes are the same.

The right amount of spiciness
Koops is my favorite brand of mustard of those that are readily available at the supermarket. And their horseradish mustard is my go-to mustard when I don't want something quite so powerful as Arizona Heat. It has a strong, pungent taste, and the horseradish definitely comes through, but not so much as to be obnoxious. I find that the horseradish mustard works really well on bratwurst or other spicy sausage. It's strong enough that it doesn't get overwhelmed by the sausage itself, and at the same time it's not so strong as to obliterate the taste of anything else.
