Best knives ever
I received my knife set earlier than expected and was so happy to begin using them right away on my weekend. I pretty much cook all my own meals and I could tell right away that these knives are the best I have used. Super clean precision cutting and they feel nice in my hand, lightweight and balanced. Really beautiful design. VERY sharp and I will make sure to have my glasses or contacts in when I use them. I have wanted some of these knives for a very long time since being inspired by Anthony Bourdain. A bit pricy for sure but I still give the value for money five stars because they really feel worth it to me. These are the only knives I will be using now!

I'm a satified customer
I did a lot of research before purchasing my first knife set. I'm a recent college grad and want to start collecting some quality kitchen equipment to last me a lifetime (hopefully). My initial tip on these kinves was from the book "Kitchen Confidential" by Anthony Bourdain - a great read if you are interested in exploring cooking and the restaurant world or "culinary underbelly" as I believe he calls it. Bourdain recommends Global knives in the book. These knives are the sharpest I have ever used. They are also very light and a delight to hold - great craftsmanship. My mother kept a set of heavy German knives that were dull as rocks (I don't think she ever sharpened them, well maybe once a decade) and it was always frightful to use them growing up as I felt I'd cut my finger clear off trying to get a raw potato sliced (I loved making the mashed potatoes). The three piece set gives you a lot of versatility. I've even *gasp* used these as an impromptu cardboard box cutter. One cool thing about this set is it includes a Santoku as the main chef's knife. According to Wikipedia, the "'granton edge' release pattern (scalloped) on the blades that not only adds style, but helps to release thin slices and sticky food after slicing." Cool.Looking into sharpening options - suggestions welcome.Thank you Amazon for the very timely delivery (it currently looks like they are on backorder or something, though).

Rascales says....
These knives are top quality. I was truly floored when I open the package. Razor sharp, perfect finish, handles just the right size to guide precision cutting , and each one easily fit into my 15 slot Wusthof knife block. Rather than buy the Global steak knives with serrated edges that can not be sharpened, I will soon order the Global 4.5 inch length blade utility knives. They are the same size as the steak knives blade wise, and serve dual use as steak or utility kitchen knives. These knives are truly top end, and I love the all metal construction. They also will keep there edge. I bought the Global steel honing rod as well, the 10 inch one and it fits without issue in the Wusthof 15 slot knive block as the Tojiro kitchen shears do which by the way, cost half of what the Shun or Global shears do, and they also make a top notch product but lower in cost than other high end Japanese knives do. Do buy this particular set, the 3 piece knife set with Santoku hollow grind. Out of all the 3 piece knife sets by Global, I find this particular set to be the most applicable for all around do it all kitchen knives. Buy it. Beats the Shuns in both cost, and issues in quality with blades so brittle sometimes they nick or chip.

I raced our chopper and won
We got this set a year ago, along with the sharpener which we haven't opened because they have stayed sharp. In fact, they seem to have gotten sharper over that time (not actually, obviously) because we have learned how to use them more effectively. It is a little strange not to have a bolster and the handles get a little slippery in the wrong situations, but once one gets used to using them, they begin to feel like an extension of your hand. This is a great set because it is truly all you need in the kitchen (plus a serrated blade for bread, tomatoes, etc, and those can be high quality at a very low cost). We have a "push down" chopper, so I raced my wife with the santoku to dice an onion and won. The veggie knife is perfect for those mid-tasks where the santouku could be overkill, and the paring knife is the best paring knife you've every used.Summary: We love the feel and sharpness of these knives - one solid piece of metal, light and, most important, workhorses in the kitchen. I highly recommend a knife magnet - it saves the blades and is so convenient.

Sleek and sexy, yet also sharp and light.
I bought these knives after much research. I loved the single piece look, and heard of their crazy weight. When I got them they were everything I expected and more. I work in a kitchen and find these knives superior to almost any other knives I have used before. The sharpness of these knives coming out of the package wowed my fellow cooks. I am in love with the weight and their lightness, this being the main reason why I purchased these knives. These feature the perfect balance of lightness and sharpness. I found that these knives improved my knife cuts making them more crisp and effortless. The single piece construction is also a big perk of the knife, this makes cleaning the knive exceptionally easy not to mention there is no wood to treat. All in all i am in love with these knives and highly recommend them to anyone who is looking for great sharp and light knives.

Favorite knives
These have turned into my favorite knives. They're a little pricey but they are amazing - you definitely get what you pay for. They have a great weight but very sharp. They've become the go-to knives to use for everything.

Great value!
Love my knife set! Tired of my moms old cutco block set, it was time to think about new knives. i work in fine dining and after noticing several of the cooks in the kitchen bringing global knives in to work with them instead of using the ones owned by the restaurant, I was intrigued. The set from amazon offers phenomenal value. They're sooo light in e hand and I've never been able to cut vegetables sooo thin. I'm really happy and think they're worth the price!

Easily the best knives I've ever used
Easily the best knives I've ever used. Even though the santoku is not as diverse as the chef knife, the edges are sharper than my old Henckels. The paring knife is very easy to use to prepare vegetables. Be careful that you don't cut yourself accidentally!
