Great cookbook with a caveat!
I love this cookbook and the stories and photos make it very appealing! I have made 4 recipes so far and want to make everything. I am giving it a 5 star rating with the caveat that you have to realize that these are “comfort food” recipes from the 60s and 70s....similar to the things I made for my kids growing up. Today we cook differently....less fat, sugar, salt, carbs, and cholesterol. I will use these recipes with some substitutions for certain items to make them healthier...e.g., frozen peas and carrots instead of canned; less sugar than called for; no flour at all in the zoodle pie(not needed, the flour makes it “heavy”); a pie crust instead of bisquick biscuits in the chicken pot pie, low fat milk, not half and half, etc. The recipes can still be delicious with healthier substitutions. I want to make everything in the book.....and yes, occasionally I will use the less healthy ingredients(!!!!) I still give it 5 stars because I love the stories.....takes me back to the same era as Steve and his family. The recipes are much like the ones I used for my kids! It takes me back! This is a great gift and I plan to buy a few more!

This cookbook is fantastic
I’ve seen mention of this cookbook, multiple times while watching the news and decided one day to see if it was worth the hype. The recipes are easy to make quite tasty and are definitely the usual recipes or the typical dishes that you would see for family nights, family and friends, gatherings. What I enjoy the most is that they’re not complicated and you don’t need a bunch of time or a bunch of fancy ingredients that are difficult to find. I think you’ll really enjoy this cookbook especially if you like entertaining.

Thank you, Grandma Reba!
Grandma Reba loved to read cookbooks. I bet she spent as much time reading cookbooks as I do reading novels. She read them cover to cover, line by line, word by word with an intense interest in ingredients, tools, and methods, but even more, the chef’s—shall I say it?—soul.Grandma would have devoured, as I did, the “Happy in a Hurry” cookbook by Steve and Kathy Doocy. The authors, a husband and wife team, share favorite quick-to-make recipes, shared by family and friends, which are guaranteed to MAKE YOU HAPPY.The genius of this cookbook is the humorous family story that accompanies each recipe, which starts your smiles before you preheat the oven. We learn each recipe’s provenance—a favorite meal first eaten in the home of one’s true love, a recipe garnered during a near-disastrous family vacation, and why a mac-and-cheese recipe claimed a spot near the front of the book.I laughed out loud for eight whole seconds upon reading the “Paprika Chicken Under a Brick” story, and the thought came to me that Grandma Reba would have loved this cookbook. If she were still here, I’d make sure to give her a copy. Since she’s in heaven, I’m sure she’s already plenty happy. Love you, Grandma!

More than a cookbook..a must have
I bought Happy in a Hurry after I received Simply Happy Cookbook for Christmas. These are both excellent books, and not just a "cookbook." The stories and photos are entertaining, and the recipes are some of the best! Not difficult, no odd ingredients, and very tasty.

Loved
This book and Simply Happy are my go to cookbooks every week when I meal plan. All the recipes are fantastic! Only complaint is the happy in a hurry book is falling apart. The binding material isn't great and so I must be careful when using or all the pages fall out of place.

Wonderful stories and recipes that are sure to whet the appetite of both the body and soul!
I first purchased "The Happy Cookbook" and was so happy with it that I purchased their next cookbook "The Happy in a Hurry Cookbook." Both are excellent books and have amazing recipes! I also purchased "The Happy in a Hurry Cookbook" as a gift for a special friend. I'm sure she will love it. The story behind each recipe is great too! Special people sharing special recipes. A big thank you to the authors and their friends for contributing wonderful food fare.

Fun Fabulous Food
So much fun to read and prepare, even more fun to eat. The recipes are delicious and look great when prepared. I love to try new recipes every week; I’ve had this book for a week and have already cooked 3 meals. The Engagement lasagna is fabulous, better than homemade lasagna and so much easier. Can’t say I’ll never make lasagna again but this hits the spot. I’m making it for my book club ladies later this month and knowing them, they’ll want the recipe. Don’t miss this find! I just ordered the original Happy cookbook and will incorporate both in our mealtime. If we want a modified version, we substitute low fat or sugar substitute. The recipes are easy and worth the investment.
