A Natural Colorant and Spice
All my life my Mom made sofrito as a base in her cooking. She always put Sazon in it. Well, Sazon is not very good for you. I make a very simple sofrito with garlic, onions a touch of olive oil and this annatto powder adds the color and spice. It has been my own base for my cooking. I got this annetto powder as I heard it was the secret ingredient to Mexican style rice. It certainly is, it just takes a few batches to find the right amount for your taste. No salt or additives in this product, perfect for scratch cooking. Try 1/2 tsp of annatto powder per 1/2 cup of rice as a starting point, plus garlic, onion, cumin, tomato sauce and chicken broth.
