Too scientific for hobbyist
THe book sounded good for my experimenting husband who loves to cook and make sauces with vinegar flavors. Sadly to say, the book is for very serious scientific minded chefs. Lots of charts .

This book explains the “why” of vinegar production beautifully.
I just received this book yesterday and I am absolutely enthralled by it. It is exactly what I’ve been searching for. This section on the chemical processes of the formation of vinegar is just the breakdown I needed to build a strong foundation for this endeavor.I’ve seen several people complain about the scholarly nature of this book and I will say that if you are looking for a book that says: do this then that for this many days, this may not be the best choice for you. But if you are like me and want to understand the process and the science behind it- get this book.

Fascinating!
This is a very technical book but it is full of gems and information and the whole process I found fascinating. The authors have a comprehensive website with a newsletter, formulas, more recipes and etc. I wound up ordering 2 EBooks thru the website and they are easier to digest than the book if you are a home enthusiast and have a limited attention span :). e.g, the authors use short sentences and don't write about the science, just the results. Also the Ebook of Recipes can't be missed. Their website also sells the special equipment discussed in the book

Math Class
I feel like I just went back to math class with this book. It is a bit overwhelming, and I have not actually used it to make any vinegar. I do plan on using it but I have started with a simpler vinegar recipe to get my feet wet.

This book is perfect for both beginners and experienced readers. All descriptions are easy to follow and are written from a practical point of view. Beginners will appreciate the instructions "Traditional Method" and "Simple Vinegar Fermentation". Both sections contain important tips how to improve the quality of vinegar right from the start of fermentation, without any analysis or calculation. Some tips were only known among professional producers for so far, the authors adapted these methods to household conditions - just by evaluating vinegar's smell, taste and appearance. Experienced readers learn from in-depth descriptions and more advanced instructions to receive fermented vinegar in an outstanding quality.From my own experience I know it's not so easy to ferment tasty vinegar by yourself. I've read several vinegar books, none of them describes the whole process more structured. The authors point out all critical issues - source of alcohol, infections, plagues, storage, old mother-of-vinegar, etc.The huge collection of recipes is amazing, for fermented vinegar (e.g., cider vinegar, aceto balsamico, etc.) as well as the usage of vinegar.

LOVE THIS BOOK!
I am So excited about this purchase! Vinegar comes from alcohol. Did you know this? I did not. I thought you could bypass the alcohol and head straight for vinegar. Acidity and alcohol content are the same. No this? i did not. THERE'S A GRAPH IN HERE. I'm not going to post it, because you should all just BUY THE BOOK. Each fruit and grain yields a different acidity level. Some fruits can be fermented with pits others will either bitter the brew or are toxic! A rotten harvest yields a bad vinegar. So much to learn! I've only just begun. :D

Must have book!
If your serious about making vinegar at home this is the book you must have! It has a lot of science and math in it for those with that kind of mind but yet written to were a blue collar guy like myself can glean the necessary information needed. Live the plans for the vinegar generator.Again a must have book for those serious about home based vinegar production!

Perfect for Wine and Viticulture Majors
While this book goes into extreme detail, it is certainly not a book that just anyone can pick up and run with. The book tries very hard to teach you the process, but I feel that without any prior knowledge of fermentation and chemical compositions, the average reader will get lost. (It has a LOT of chemistry speak.) Not only that, but the book goes on to talking about equipment that you will not normally find or have on hand in order to start or complete the process of vinegar making. I feel a book like this is far more suited for people who are already into fermentation processes like wine and beer making. Three stars. Great book, but for only a small audience.

This is a very technical handbook that can help you make great vinegar for home use, or set up a small business. Even with my Health Science, home-brewing, and cider-making background, I found some sections quite dense. That is not a bad thing in my opinion though, quite to the contrary.
