Mezzetta Napa Valley Bistro Sun Ripened Dried Tomato Pesto, 6.25 Ounce (Pack of 6)

Where has this been all my life?!
This tiny jar probably isn't worth its weight in gold, but it almost feels like it. Spoon half or a quarter of a jar over a pack of Barilla Ready Pasta noodles (penne, gemelli, rotini or elbows, all cooked in literally 60 seconds), and you have a meal for 1-3 people ready from start to finish in 75 seconds. I mean it -- 75 seconds to prepare dinner!Aside from the convenience factor, this is still a winner because it tastes so good. This is my husband's preferred flavor; I like this too but mostly prefer the basil version. Either way, a jar doesn't last long. We have plenty on the pantry shelf in case of emergency (either the natural kind or just being hungry when you don't have time or energy to cook), but the supply always dwindles faster than we thought it would. I wonder why! A surprisingly balanced dinner, and one grandpa or the kids can make for themselves (hey, estimate 120 seconds for them just in case they're not as swift). And if you're home by yourself and find it's late and you haven't yet thought about dinner and are almost too tired to try, nothing beats this. The only other time I use up several jars of this is when cooking fresh pasta for a company dish or adding to an appetizer or antipasto spread. Exceptionally good!!! Can't believe it took me this long to find this gem.

Deep flavor
I use this as the base of a heavy cream pasta sauce. Think pink. Great brand.

good stuff
Got a bottle of this stuff, I think at Whole Foods or some place like that.I mixed half of it with a bottle of Paul Newman marinara and 8 ounces (dry) of angel hair pasta boiled in water.Tasted pretty good. Makes for a richer and zestier pasta sauce than just marinara sauce alone.I guess one could make this stuff by scratch, but it's a reasonable price compared to the real expensive pesto sauces.I checked the expiration date and it is over 2 years from now. And I bought it a few months ago or so.So this stuff is not something you have to worry about using quickly.
