Loose Leaf Oolong Tea: Ti Kuan Yin , also known as the Iron Goddess of Mercy, is a premium grade oolong tea from the Wuyi Mountains in the Fujian Province of China. Special care is taken when preparing this quality oolong tea. The harvested leaves are wilted in the sun, then shaken in tubular bamboo baskets to bruise the leaf edges causing the edges to oxidize faster than in the center. After about 20-25 minutes of this labor intensive process, the tea leaves are fired to halt the oxidization process and seal in the unique oolong tea flavor profile.
