Q: Has been kiln dried???

All of our wood is naturally cured for the best smoking results. It does contain a small amount of natural moisture so no soaking is necessary. Kiln drying removes all the natural moisture and most of the sugars from the wood. These sugars are what help produce a great flavor. Kiln dry causes the wood to burn up fast but produce a lot of BTU's thus needing to use more wood. Since our wood does have some moisture in it, it will burn slower, lower BTU value, thus needing less wood, and will smoke longer producing a better flavor. Use less wood than you normally do or you may over smoke their meat.

Q: Is the mesquite, real mesquite wood chucks or some other wood with mesquite aroma added? Same for the other chunks you sell.
