Q: Will this attach to plastic playpen?

It depends on how the playpen is constructed. It attaches by turning a plastic nut that compresses the bars of the pen between the nut and that rectangular plate at the back of the bowl. The "bolt" coming out of the bowl is 5/8" in diameter but the sides have been shaved off a little so it will fit as long as clearance between the bars of the pen is at least 9/16". The plate is about 2" wide so the maximum separation is no more than that, although it might not hold as securely at that width, so probably best to stick to bars no more than 1-1/2" apart. Also, it's design to fit against vertical bars, not horizontal. There are vertical groves in that plate at the back of the bowl, roughly 1/8" apart; it'll hold more securely if the bars of your pen can fit into those groves. The flange around the nut is about 2-1/4" in diameter and this needs to fit snug against the bars, so make sure you have that much clearance around where you're attaching it. If you put the bottom of that rectangular plate against a horizontal bar, for instance, then the nut probably won't make good contact and it won't hold securely.

Q: Does it come with two bowls or just one

It’s just one. It’s the plastic outer bowl, and the inner stainless steel bowl. You could use it as 2 bowls though if you separated them.

Q: Will this fit a dog gate that has 2" wide openings?

not sure how far apart our crate is but we have ours secured to our crate
