Q: Is it dishwasher safe?

18/8 Stainless is fully dishwasher-safe. But remember what this thing is intended to do, strain out and retain solids from liquids. If you put it in a residential (low pressure) dishwasher with other dirty dishes, it will do its job, strain food particles washed off the other dishes out of the wash water and retain them, and you will likely not find it clean at the end of the cycle. To wash it in a dishwasher, you must first hand-wash it clean of all solids and then wash it only with other items that are free of any solid particles. One may then ash why one may bother with the machine. The answer is that the machine will fully remove grease and oils and flavors and odors and, in a capable machine, also sanitize it.

Q: What is the capacity? Like how much pasta could it hold or how many cups of liquid?

The liquid will go right through ;) I would say probably 2lbs or more of pasta. This fine chinois is my favorite I’ve ever used, and I work in professional kitchens.

Send it back. The handle on the chinois welded to the strainer

Q: Looking to make applesauce and pea soup (not together). Is this item suitable for the job?

I use it to strain eggs for custard, it would work for the soups too or any fine type of pureed food, but I don't think it would be the best for hard coarse type of food since you'll end up with the clear juice, I would go for apple sauce or any bigger particles of food with a fine mesh or Chinois
