About as good as it gets.
Before I tried King Arthur Flour Bread Mix, I had tried many other brands as well as mixing my own flour blends. Some were good, some were semi-okay and a few were gosh awful. However, King Arthur Flour Bread Mix is by far the VERY BEST! When I score bread(I have a scale of 0-5 which was use by most professionals) There were 5 important characteristics used in scoring bread. GENERAL APPEARANCE: King Arthur mix produces a loaf size that can be thoroughly baked. The loaf is evenly rounded and doesn't have budges. LIGHTNESS: the loaf is relatively large for weight and lightweight in appearance when cut. CRUST: the color is an even golden brown over the entire loaf; it is smooth and free of cracks with a shredded appearance; quality illustrated by a thin, even crisp tender crust over the entire loaf. CRUMB: The slices are creamy white with a satin luster. The exterior and the interior of the loaf is uniform in color, simply meaning that the outside is a golden brown while the inside is a creamy white. Uniformity, no streaks. The grain is fine and even, many small oval cells with thin walls rather than just a fewer larger, uneven cells with thick walls. The texture should be elastic, moist, tender, soft, and velvety. The loaf should spring back into original shape after pressing firmly between hands. When a slice of bread is cut, impressions should not be left after gently pressing with fingers. FLAVOR: the taste should be fresh, nutty, light. It should be free from acidity and other undesirable taste. It should have a pleasant odor that agrees with taste.. I made a loaf of bread yesterday using King Arthur Four Bread Mix which had a score of 5 on every characteristic or PERFECT. Today I am going to make hamburger and hotdog buns which I will freeze. Tomorrow I will make rolls which I will also freeze. Make sure to follow the instructions. Happy baking.

exactly what I was looking for
Great!! Purchasing the Schar bread loaf is very convenient and tasty, but the slices are very thick. So, sometimes I still prefer to bake bread at home (something I did all the time before we found out about our gluten/dairy issues running rampant through our family). This is the first gluten free bread mix we all agree is tasty. Better flavor than other mixes we've tried. I follow directions for handmixer version (I've yet to find any mix that works in my breadmaker) and let it rise twice the recommended time (I warm the oven to 150-200 degrees while mixing batter, then turn it off and let door stand open for 1-2 minutes before putting in the bowl of bread dough, covered in saran wrap or elastic saran cover) for the first rise. When I transfer the risen dough to the loaf pan, the oven is still a little warm and I let it rise the second time as instructed, covered with elasticized plastic wrap with Nucoa or Earth Balance rubbed on the underside of wrap. Put a sheet of foil on the rack under the loaf pan in case it rises too long and overflows. remove plastic wrap/cover and bake. When it comes out of the oven, remove it from the loaf pan within the first 10 minutes, place on a wire cooling rack, and cover loosely with a damp kitchen towel. Let it cool thoroughly before slicing. Since the top is so crusty, I often slice the loaf while holding it on it's side or upsidedown to keep it's shape. I then split it into ziplocs layering only two slices at a time and freeze. When needed, I remove one or two slices at a time and toast on the frozen setting.

Easy. Really good.
Simple to make but needs a little bigger loaf pan than typical 1lb.I went lectin free and had no bread for three months. Wow, was this a great find. It’s a little spongy, like pound cake, sort of. Way better than the early gluten free varieties stores sell. Great flavor, toasts well. Will buy again!

Best gluten free bread ever!
I've tried a lot of gluten free bread recipes, both mixes and from scratch. I'm so glad I found this product! It has the consistency of "real" bread (even if it falls a bit short on taste). It smells wonderful and yeasty while it bakes. My entire family loved it and devoured the loaf in one sitting - even though I am the only one of us on a gluten free diet. This made a big, fluffy loaf that did not deflate while cooling. It slices easily, holds up in the toaster (but don't expect it to brown in the toaster), makes perfect sandwiches (YAY!!!). It keeps well overnight and a bit of microwaving make it like fresh bread again. I also used it to make pizza crust, and got mixed reviews. The crust rose a lot and was bread-like, but the kids prefer a thinner crust. It might take a bit of experimentation on getting it rolled out to the best consistency.

The best gluten-free bread!
This is the best GF bread I've ever eaten! The mix is easy to use, with very clear instructions. It does take a little time from start to finish, because it's yeast-risen bread. But the results are worth it. I have tried several mixes and recipes, and most of them either have a weird taste or crumbly texture. This bread has a wonderful texture (like "real" bread) and tastes great. One tip (this is also on the box) is that if your loaf lasts more than 2-3 days, slice it and store it in the freezer. It will stay fresher that way. Otherwise, it will become a little stale sitting on the counter. But even if it's a little on the stale side, it makes great toast!StephanieIndianapolis, IN

This is a good gluten free bread but it requires more time to make. You also have to add butter, eggs, milk. It's not a complete mix.
