Q: Is there a way to adjust these or is it just a bad design? Both of ours in the showers are way too sensitive even with the water at 130

There is no way to adjust the sensitivity of this valve. Water heater exit temperatures should be between 120° minimum to a max of 140°. 120° is the minimum recommended temperature to prevent the growth of bacteria. Temperatures much above 120° make even small movements of most valves equal large swings in temperature, therefore setting the appropriate temperature more difficult. Check your water heaters output temperature, it may be set too high. Bring it down a notch and check the adjustment sensitivity again after a couple of days. It should be easier to set your desired temperature.
