The Tomoe 6 inch Chef Knife presented by Chubbco will be the bread and butter of your knife collection. It is the blade you will grab for on almost any job. With enough heft to handle chopping bone it also allows for precision cutting and control. The 1L Tomoe knife is constructed from a solid piece of CrMoV15 steel. This means 15% is a combination of 14% to 14.5% of Chromium (Increases resistance to wear and corrosion), some Molybdenum (Increases strength, hardness and improves resistance to corrosion) and Vanadium (Increases strength, wear resistance and toughness). The steel on these blades are plenty tough and resists corrosion well. Each blade is ice hardened for sharpness and stain resistance and with a Rockwell hardness of 57 these blades will retain their edge with only occasional maintenance necessary. The blade is then sharpened "Hon-Togi" style, which means "Samurai Sharpening a traditional sharpening method passed down through the generations that creates a truly sharp blade. With over 100 years of experience working with steel from Sanjo City, Japan, these techniques have been passed down through the generations culminating in the production of this knife. Balance and security is achieved by the full tang construction and triple riveted Black Pakka wood handles. The curved handle fits comfortably in the hand and allows for easy handling. Hand wash only with warm soapy water and wipe dry. Please do not machine wash. Each knife comes in its own magnetized gift box.
