Q: How much of the stud has to protrude in order for this to grip?

The thinner the stud, the shorter the required length, that is 1/2 inch-0.8 inch, 1/4 inch-0.4 inch.

Q: I am having difficulty using this tool. Is there any technique to it?

No not really. It tightens as a left hand thread. I tightened it as much as possible by hand and then attached the impact driver, I used the lowest setting on the impact driver so as to gently shock the stud loose. It worked wonderfully for my subaru exhaust studs.

Q: Will this work for an 8mm rounded off bolt?

Worked for me for a 6mm bolt and 8mm is 5 which is between .25 and .50 ( 1/4 Tuesday I 1/2) so I would think it would work well for you.
