Stainless Stiff Boning Knife/ Protein slicer. 6″ cutting edge, 10.5″ overall length. Blade is made with AEB-L Stainless Steel - a steel developed to make razor blades. Black linen Micarta handles. This steel was heat treated on site with sub zero treatment before tempering. This knife is excellent for slicing proteins and heavy boning work. Great for any kitchen and certainly should be included in any Chef's knife bag!
