Tell us about the best and most challenging parts of the creation process. The most challenging part I’d say is working against the clock. The greatest “aha moments” come suddenly and seemingly out of nowhere, when you least expect them, and when you’re trying the least. Trying to make those moments happen when I feel like we need an idea or a solution when we’re short on time is a big challenge! The BEST part of the creation process, however, is when those moments do happen. It’s an amazing feeling.

Received a rotten moldy foul yuck stick unsuitable for feeding to beast or enemy, but might not be manufacture's fault
A picture is worth a thousand words, so I've included one. Send the kids and weak-stomached adults away before clicking on it.When the stained-from-within shipping package arrived it had an "off smell" before we even opened it. Exposing the contents revealed the obscenity depicted in the image. We did not tear open the salami's greasy wrap for the photograph, it was already like that inside the outer shipping package. The salami was oozing, moldy, and rank. I'm not sure the Charlito's brand is responsible because I don't know how old the salami was, how it was stored, or why it's wrapping was partially missing. All five of my senses were violated and I would never try to gag down a mouthful of this rancid putrefaction.

Tasty and Expensive
The salami was shipped promptly, and was nicely packaged. A very tasty rustic Italian-style sausage. However, I don't feel it is worth $53 per pound.

This salami had the right amount of dryness, but ...
This salami had the right amount of dryness, but very little flavor. There needs to be more spice and maybe wine added to give some flavor.

Rancid and hard as a rock
Smelled rancid. It was hard as a rock, had to pound on my expensive sharp knife to cut through. My husband took a small bite and it was fully dry and rancid. Will not recommend or buy again. You can see the crystallization on the outside of the sausage as it was dried out completely.

The dog gave it 4 stars
Terrible. Put it on a cutting board with another salami and some cheese, no one liked it, it was the only thing left at the end of the night. Pulled it out the next day, and couldn't find a way to like the musty, wet-cardboard taste. The dog finished it off... He had no complaints.

Wonderful treat with cheese and fig jam
This stuff is amazing. I used to order tons of this when I lived in NYC particularly during the holiday season. Flavor and texture was superb.I'm not sure where the negative reviews are coming from, unless there was an inventory/shipping/storage problem. That sort of comes with the nature of preserved meats.

Sugary sausage that spiked my blood sugar.
I generally don’t write reviews but this salami is terrible. I had a slice and throw the rest down the garbage shoot. Salami was super dry and very sugary. I should have the ingredients but the salami contains cane sugar and is made from pigs that are fed a vegetarian diet. Very strange since pugs are omnivores. Sausage was extremely expensive and pretends to be gourmet.
