Q: So you fill the water bowl like normal and then place this on top wrapped in foil? Is that how it works?

the recommendation was to fill the bowl with sand. they said that the water in the pan did not add moisture to the meat. I tried it for a while but went back to the water because I felt that the pan with water was better.

Q: This fits so snugly inside the upper edge of my water pan it practically seals it off. Is that the intent? How do I check water level or add water?

Don't use water. Fill about 3/4 of the way full with play sand from Home Depot. Also wrap lid with aluminum foil for easy clean up.

Q: Couldnt you just use a pizza pan from Walmart that costs $3.99 to cover the water pan?

I used a pizza pan on the lower grill rack so it's not on top of the pan. When I've needed meat on both racks, I put the pan right on top of the water pan. There are 3 holes around the outside of the water pan, and when I set it on top, I find the water level drops just like it does without the pizza pan. So, I believe moisture still gets out for the meat.

Q: Will this accessory work for the Expert grill kamado?

Probably and most likely not. Most kamado smokers do not use water accessories and usually have ceramic disk or plate inserts.
