This knife is fantastic. It is holding an edge very nicely. I was torn between the 5" and 7.5" - didn't want to spring for the extra money on an untested brand but now wish I had just done it because I am going to have to buy the other one now!

After years of drooling over these gorgeous knives, I finally got one.And now I'm wondering: Why did I wait?It's as close as you can get to being the Perfect Knife.The super light weight eliminates fatigue.The sharpness is amazing (but time will tell how that lasts).The only slight issue is that the handle is a bit short, perhaps designed for smaller hands.

Only after completing my initial collection of Al Mar Ultra Chef knives did I purchase my first Global knife. Since then, every kitchen knife I have purchased has been a Global. These knives inspire the need for new adjectives to describe sharpness. Some how, words like "extremely" and "razor" just don't seem to (pardon the pun) cut it. While I have not been as impressed with some of Global's utensils with regards to quality (the Princet Utility tongs which I rated 3-star) and price (the $120 carving fork and $180 ceramic sharpening rod) I am not a chef, but I have collected knives of almost every type for 30+ yrs and I know quality. This is easily the most used knife in my kitchen.

If you have never had the privilege of owning a global knife, you do not know what you are missing. Everything that you read is true (balance, sharpness, quality etc... It feels like an extension of our hand.

- ultra sharp- thin and fluted Japanese style blade makes cutting easier (depending on what you're doing, of course)- all-stainless steel construction is clean and hygienic- unique Global-style handle is grippy and comfortable- if I had one knife, this could be it (I personally prefer this shape over Western chef style or Santoku style)

I've dealt with many knives over the years, but this is my first Global. First off, the appearance/finish of this knife is second to none, it almost looks too good to cut with. As for performance, this is the sharpest kitchen knife I've ever used, hands down! It cuts through veggies effortlessly with such smooth precision. It's safe to say that the Henckel's aren't going to be getting much use anymore, since I now plan to piece together a nice set of Global knives.

Leggero, impugnatura comoda ed efficace "ergonomica", e soprattutto una lama incredibilmente tagliente. Ovviamente deve essere accompagnato da una buona pietra per affilarlo, come per tutti i coltelli degni di questo nome.

Ottimo coltello. Professionale assolutamente da avere tra i coltelli base in cucina. Ottimamene bilanciato, leggero, lama ben affilata. Lo utilizzo spesso con soddisfazione
