Outstanding Paring Knife
I finally broke down and had to buy new knives. After doing a little shopping I ended up on the HANZO FB page and watched some of the videos. Unlike the 9.5 inch knife, there wasn't any tricks attempted.. but this thing did the job. I minced up some fresh garlic and felt like a pro while doing it. I'm a home cook and I love to play in the kitchen.The selling point for me was that these were priced less that competitors blades and if you are looking in this category you owe it to yourself to check out this one. According to the documentation it should hold its edge about four times more than a typical knife would and is made ultra hard and sharpened steel. Besides providing an excellent culinary experience the customer service / customer satisfaction guarantee is outstanding

Beautiful, versatile knife
I picked up this knife because I'd been wanting a versatile knife to use around the kitchen. I couldn't be happier! It's quickly become my go-to knife.It has a beautiful, sharp blade, comfortable handle that gives me a good grip while cutting or chopping, and is easy to clean.If you're looking for a great all-around knife, you can't go wrong with this one.

A truly great knife
Hanzo, sturdy, well crafted, sharp enough, probably will stay sharp a long time. The coolest knife in my pantry. I read the bad comment, and wondered, no more do I wonder.As advertised quality.Thank you Hanzo, & peace to you

Good Looking Knife
I gave this knife a 4star rating because this is a Christmas present for my wife. We haven't used it yet,however I did open it and boy I can't wait to use it ! It feels good in my hand and seems extremely sharp,and it is beautiful looking !

Disappointed.
Honestly, I feel a little bit misled here. This knife, after being touted on Amazon as "Japanese", arrived in a box that was clearly stamped "Made in China". I could probably get past that, but the knife isn't very sharp, and requires a lot of effort on my part for what I perceive to be simple tasks. This could be user error, as the rest of my knives are German. Either way, I feel I should have spent the extra ~$10 and purchased a Shun of similar size.

The perfect paring knife, by far!
I love high quality knives, but I didn't realize how little I knew until I bought this paring knife. it has perfect heft and incredible sharpness. Some women might consider it too heavy, but that is one aspect of it that makes it such a perfect cutting tool.

Superb Paring Knife
A very worthy kitchen upgrade. Surgically sharp and with a beautiful and comfortable handle. Garlic crushing end handle another plus. I'm very pleased with the Hanzo.

Way too heavy 3.75 in paring knife from Hanzó
In December 2016 I purchased Hanzo Katana 9.5 inch chef knife. It arrived fast and because I liked it, I also ordered 3.75 in paring knife. My order was placed Dec 19 but I had to wait full 9 days until this order was even shipped. This is the way am.z.n let us feel like second class customers. Intolerable, no matter what holidays are in between. And it also hurts sellers business.Hanzo Katana 3.75in paring knife arrived in a nice presentation paper box secured in a foam cut out with velcro strap. I can tell you that the strap was absolutely essential for transportation, because knife handle was very heavy. It felt so heavy that I put it on a scale right away. Hanzó paring knife weight was 134g or 4.76oz. Just for comparison, paring knives of similar size by Yaxell and Wusthoff weighted 92g (3.25oz) and 50g (1.74oz) respectively.The knife feels very heavy in the hand and in an upright position it has strong tendency to fall thru your hand and cut you with a very sharp blade. Paring knife specifications showing blade length 3.75 inch (95mm) and height at heel 0.79” (20mm) are about correct, but declared blade spine thickness at bolster 2.2mm (0.086") is WAY OFF. I used caliper to measure it and it was NO MORE THAN 1.6mm, i.e. cca 20% less than specified. I also do not believe that such thin steel has truly 67 layers. Very thin short blade in combination with overly heavy handle makes this knife uncomfortable and unbalanced. Handle, bolsters and blade are smooth and polished. Promised 60+ Rockwell steel hardness from specs is different than information printed on the blade 60+-2, which in fact guarantees hardness at 58+ level only. Also grinding on a brand new knife should not start with a notch at the bolster (see images).I own knives from several upscale brands, feel betrayed by the above discrepancies and intend to return the product for a full refund.
