Q: How do you calibrate this thermometer? Most come with a hexagon adjuster to turn while in an ice bath

Can't tell you about calibrating the thermometer, I checked mine with thermometer in my garage and it had same reading as garage thermometer. I took mine out today and pushed in to the ground and the thermometer read 40 degrees. I pulled it out of ground and took it back into garage and in a few minutes it read 50 degrees again.

Q: Is 12.7mm supposed to be 12.7cm? A stem that's 1/2 inch long doesn't seem useful.

yes. The therm is 12cm...around 5" long

Q: Is the result still accurate when used to measure air temp as well as soil temp?

Sure you can use to to measure air temp. There are no physics that would prevent that. Just give it plenty of time to get a good reading. It has a lot of thermal mass and would take longer to get a good reading. However, since the temperature range is so extreme it would not be my first pick.
