Q: Are these made out of the woods indicated as colors? If not, what species of wood is used?

All Fletchers' Mill salt and peppermills are manufactured from solid (meaning not laminated) Rock Maple and Cherry woods. Cherry mills are all finished with a clear finish that brings out the natural beauty of the wood. No stains or enamels are applied to our Cherry mills. Maple mills are finished with a variety of finishes including clear finish, stains and enamels.

Q: Is this the same unit as the Vic Firth model?

It seems to be the same company. I own a Vic Firth and a Fletchers, they are identical to one another

Q: I note it says for "dry salt" only. so, can i assume it would not work with celtic sea salt, which while it is not strictly wet, does stick together?

I would say that the sea salt would probably have to be the kind that does not stick together. i think it would be difficult for it to enter the grinding chamber otherwise.
