Hi, because we are a classic simple syrup, we use just a hint of our own special blend of Tahitian and Madagascar vanilla extract in all of our simple syrups. I would say this is truly vanilla. I have previously purchased Sonoma Syrup Co simple syrup in spearmint flavor & received exactly that. Hence my review referred to that flavor of syrup.

Q: Will this mix with just water, as I would just like to flavor water?

I have mixed it with mineral/sparkling water with great success (makes for a great lavender Italian soda) but never just tap water....though in theory it would work just as well but without bubbles.
