The small grinder gives a more fine grind than the larger size but as for choppy or fluffy that has more to do with freshness. More fresh = more fluffy

This is a light metal, maybe stamped aluminum. 🙂 Pretty good lil workhorse. Gets a lil sticky, but not bad. Overall great size and use.
