Q: Would it be code permissible to also run a single pole switch to bypass this switch for manual operation when/if desired?

I do not know codes other than they are mostly about safety. If you get accustomed to turning something off with your manual switch, might you create a dangerous situation if it goes on when you think it is off because your manual switch is off?

Q: Will the device sense current if i feed the entire cord (i.e. l1, n & grd) thru the hole? trying to avoid disturbing the existing wires for warranty.

No, it will cancel out the signal. Only the current conductor should pass through it. May need to wind several turns around it if it draws low amps.

Q: is this avail in normally closed? instead of normally open

Combine your sensor with a relay and you can have normal on or off mode options. I use them on all my appliances to sense power demands that will vary on solar panels to my grid tie system.
