Good question. Always wash with dish soap and clean plus dry with cloth after cutting anything acidic and put it away, but not with anything that can roll your edge. Do not put in dishwasher and you should hold the edge for a good while and do not cut anything like joints or bones. It’s best for boneless meats and vegetables. You can cut fruit as well. Just makes sure you always put away and clean after each use don’t let it sit after use.
