Nice flour substitute!
I've been wanting to reduce gluten in my diet for various reasons, so I was quite happy to give this flour a try. It's very white in color, fluffy, and has a nice, mild, slightly nutty flavor that I really like.Looking up about how to use this flour, I came to the conclusion that for every one cup of wheat flour, use 3/4 cup of cassava, then adjust as necessary. I've used coconut flour in the past and knew that it's like a super-sponge for liquids and only needs a small amount compared to regular flour, so this cassava was easier to adjust to using.This flour makes wonderful pancakes and crepes, and it thickens pan sauces beautifully. Wheat flour gets gluey, arrowroot can be slimy in texture, but this is a nice balance between the two.I'm looking forward to using this cassava flour in many other baked goods!One small issue is that the bag doesn't reseal easily. Versatile replacement but use less
Hope and Harvest Cassava flour works as a decent replacement for all purpose and wheat flour. It is well refined and very white. It doesn't have any strong smells and smells almost like all-purpose flour, with about the same consistency. I looked up a few recipes for it and all of them recommend using less cassava flour than all-purpose as a replacement. It felt mostly the same when using it to make banana bread, and the results were nice and moist with a brown crust. Nutritionally, it is a bit different than other flours although wheat flours also tend to be low in similar values. It has no significant amount of protein, sodium, cholesterol, or fat but a very large amount of carbs. The main difference with wheat is the lack of protein as well as differences in minor nutrients. Overall, it's a decent wheat and grain flour replacement in terms of results but remember to adjust the quantity used. One annoying thing is while the bag looks good and is a durable plastic, the zip lock seal is terrible. It won't zip plus parts of the zip lock are not attached to the bag, so gaps are inevitable. I just fold the top and binder clip it, but I would probably relocate it to a different container in the future.

Quality Cassava Flour That’s Great for Gluten-Free Baking
Cassava Flour is no stranger to my pantry because I have been gluten-free for over 20 years. Cassava Flour is almost “neutral” tasting - just the slightest nutty flavor. It can be used as a substitute for all purpose (wheat) flour in many recipes with a couple of caveats:1. Cassava flour is more powdery. You’re more likely to get that big FLOOF! of a powder bomb if you plop something into it or try to mix it in too shallow of a bowl.2. Cassava Flour is lighter than all purpose wheat flour.3. Cassava flour absorbs more liquid than all purpose flour.So instead of using the same amount as all purpose flour in a recipe, start with less and then adjust as needed.This Hope & Harvest Cassava Flour, when purchased in the 5 pound bag, is very competitively priced. I store what I won’t use in a couple of months in Mylar bags.

great gluten free alternative
my best friend has celiac so I've been interested in finding gluten free alternatives lately. This cassava flour works so well as a flour replacement and it is gluten free friendly

Great flavor and fantastic product
This is a great product, it has good flavor and is fresh. Cassava flour is a great gluten free substitute for wheat flour. I try to avoid gluten because I had Crohn’s and the only thing that helped me get better was a diet called Specific Carbohydrate Diet that cuts all gluten and wheat products and only allows limited types of carbohydrates. So this is the perfect substitute for wheat flour for me and helps me maintain a better health and keeps me pain free.Great product with good flavor and comes fresh. Highly recommend it.
