Very smooth.
I suffer from a case of stricture and needed something to help the situation. I find these to be very smooth with a mirror finish. No flakes. The sizes are lightly stamped with no rough edges. I think the are stainless plated as they do seem to be magnetic. There is a full range of sizes.
