Great upgrade
This knife is just what I wanted. So much sharper than my Victorinox has ever been. This knife has sped up and increased my prep production exponentially. No issues whatsoever with craftsmanship or 'exposed tang' as I had read in other reviews.

AVOID THE GERMAN STEEL!!!! The Japan VG-10 is really nice quality and REALLY sharp
Too bad I can't leave a review for the very different products that are a part of this listing. The German Steel variants are proper garbage. The Japanese VG-10 steel are really damn nice. If you want better quality than this be prepared to pay 3x as much. These is amazingly good bang for your buck. Just be careful when you first start using it as it is incredibly sharp. Have not had it long enough to evaluate durability of edge, but I am hopeful given what I've seen so far.

AVOID. Significant quality issues. Uneven through tang and handle, arrived with a cracked handle
I was looking for a high-medium tier Damascus knife that was gift-worthy, attractive, and functional. Cangshan’s portfolio and website both seemed impressive but it was unclear how this knife was different from their J series line. The blades appeared identical with only the handles being different. I preferred this handle.In fact, although this line is less expensive it did seem superior with its pinned mechanical securement of the handle to the through tang, including an artistic mosaic pin, whereas the J series has only a concealed tang and a far more simple handle with no mechanical securement.Unfortunately this knife was very underwhelming when I finally had it in my hand... The packaging is great, the magnetic sheath is perfect, but the fit and finish refinement is some of the worst I’ve seen and was embarrassing (I gave this as a gift to my bff and bought one for myself so the need to return both was a double whammy). I’ll elaborate...The through tang (metal) was smooth to the wooden handle only on the butt end. The top and bottom end of the handle was uneven. This was very apparent and uncomfortable with a firm grip. This means that the handle was not ground on all sides after assembly - apparently just the butt end. A very curious shortcut. Both knives I ordered exhibited this flaw and other reviews on Amazon make this same complaint. Unacceptable. Normally I’d have returned the knives and perhaps spent more on a more expensive series but for a manufacturer to consider this acceptable means I cannot do further business with them in good conscience.The other main flaw with the knife I received was a crack in the wood in one side of the handle. This was very obvious and was not sustained in transit - the box was perfect and the knife comes extremely well padded.All in all this was a nice try but a swing and a miss. After this experience I’ll gladly spend more for Zelle and know that I won’t have a single issue. Lesson learned. I hope my review helps others not have to go through the same exercise to land on superior manufacturers.

Good but...
Over the past year I have purchased several Cangshan knives. The others have all been Swedish steel and rate five out of five stars...the same cannot be said here. As with the manufacturers other knives I have purchased the balance and quality is exceptional save for the fact that the tang is a little proud or the wood of the handle shrank on this one...

The full tang exceeds the protection by less than an mm & it cuts!
1 star for the bad workmanship @ the handle. The full tang exceeds the protection by though less than an mm, it cuts! Had to gently and slowly sand it down with one of my mini super fine whetstone. Disappointed.
