Tastes Like Alaska
I was born & raised in Alaska where my dad got a moose & sometimes a caribou for our winter meat. We had caribou summer sausage & this is reminiscent of that delicious stuff - a little drier, a little smaller in diameter. My book club read The Great Alone by Kristin Hannah, a novel of AK, & we always have a meal based on the food in our book. We had salad bites, baked potatoes, fresh king crab, & Indian Valley Summer Sausage sliced thin w/cheese. The sausage is a little spicy but only medium so. Our hostess's husband tried some & wants to order more.

Not spicy at all.
Just tastes like regular beef sausage. Not bad, sure, but "hot and spicy" is a description not deserved at all. A look at the ingredients list does not show anything that should make it spicy, either. The spiciest ingredient listed is garlic, which isn't spicy.I bought this mostly for the reindeer element, because I hadn't eaten reindeer before. I've had venison, which should be broadly similar. I couldn't taste that in this sausage. Again, it just tasted like beef.

Sent this to friend in lower 48 who was born and raised in Alaska. He said it was just as he remembered making it as a child. Perfect thing to cheer him up. He was thrilled.

Very salty and not as good as you get in Alaska, but that is not a surprise is it?

Caution: Contains Milk!
Bought this as a gift for someone who has an extreme allergy to milk-protien, because I assumed that summer-sausage is usually dairy-free. However, for some reason, the makers of this summer sausage decided it needed to have milk in it, therefore it's really more of a salami (which is the correct name for a sausage that includes milk) Fortunately, the recipient appreciated the humor in it and will serve it to guests for the awesome factor, even if she can't eat it herself (and will have to wash her hands after slicing it!)

Too much PORK! Not enough DEER! Why charge for VENISON SAUSAGE when it's mostly RUN-OF-THE-MILL PORK! That's just not right!
