How do you prevent the weightless aluminum unit from floating away when not attached to a cable?

I have server in my church for more than a Decade doing AV support. (its a 3 or 4 times a year thing where they need help with setting up projectors. Cables are a problem.
 I think you mean that the cables move the projector from where you place it, as the cables are stiff. (Which is why you go so many snarky answers. )  Usually I use Painters tape  to tape down the cables, its cheap and mostly doesn't leave a residue if you leave it for only a day or so.  More expensive tape like this, is called Gaffers tape, which is popular used in stage and movie industries to hold stuff temporarily together. 
  Or you can mount it on a tripod or some other fixture, This product shows a Tripod with flexible legs, that looks like a good option. You can also use tape on the tripod for more stability. Maybe a case or something that would naturaly accompany the projector could be dual purpose, as case and base for the projector. Table cloths are often used to dress up plain tables at conventions and another events, theres lots of options there. 
If your worried some one my take it. Such as a child to play with the shiny toy, or someone who wants to take it home. Your looking for a more permanent mounting with screws, and the more resistant to being removed, will be more challenging and expensive to accomplish, mounting brackets and kits exist for projectors, I am not sure this  is good for that option, you might want to look at a larger projector, or perhaps gluing a camera mount to the bottom of the unit with a strong adhesive, a high technical skill is needed to make that look good.

Also 
You can buy / locate lighter HDMI cables, they won't be able to carry the signal far but may be perfect for a laptop / tablet arrangement. 
You can use wireless options such a blue-tooth products. 
Another creative option is to hold it down with some kind of sticky substance. Depending on how permanent you want its placement. There are things much like play dough I have seen to hold posters to walls temporarily that vary in strength from Post it note, chewing gum can be used in a pinch.  .  You can use double sided tape, again like before they come in Super strong  to removable (3M command strips ) . On the quick you can roll tape around your finger, sticky side out. and use these loops to hold it down.

What does brightness translate to in lumens? Using it in small mtng rm w/ambient light for powerpoint presentation and laptop instruction

It's fine awesome....play around with it until you find the position and setting you want...I  have watched it on my house...on the outside...with family and friends around a fire...the best...everytime a car comes by they slow down just to see the movie we are watching...
